Daily meals
This is SO good !
Sometimes eating healthy is frustrating. It is like something is missing...
For this meal, no.
It seems to be long to be prepared, and it is, a little bit, but think. Even if it takes 45 minutes for preparing, you will have done 6 meals with only 45 minutes of work.
You can keep it 4- 5 days in the fridge, and the more you wait, the better it tastes.
You can freeze it and you will be happy to have it the day you want to eat healthy and have no time at all to prepare something...

If one wants the complete recipe, ask me by comment, but, roughly, there is:
  • A layer of eggplant. Not precooked as often told in the Moussaka recipes. But I removed the bitterness using the salt trick.
  • A layer of home made tomato sauce. I mix the sauce in a blender in order the layer to be thin. Added basil leaves
  • A layer of cottage cheese yogurt sauce to replace the Béchamel that is the awfull thing for the diet in the common Moussaka. I also put crumbs of Feta cheese in this layer
  • A layer of zucchini.
  • A layer of raw spinaches. I didn't boil them neither as often asked and it was even tasty!
  • Another layer of tomato sauce
  • Another layer of cheese sauce with Feta crumbs
  • Baked it 45 min at 400 F.
